A recipe adapted from Instant Entertaining by Donna Hay:
4 to 4-1/2 cups rolled oats
3 cups apple juice (I've been using a 750 mL bottle)
1 cup chopped raw unsalted pistachios
ground cinnamon to taste (I use about a half tablespoon)
1 quart yogurt
2 10-ounce packages frozen fruit (your choice)
syrup or honey
Warm the apple juice one to two minutes in the microwave so that it's warm to the touch. Add the rolled oats, stir to combine, and allow them to sit for a half hour. Meanwhile, chop the pistachios, add the cinnamon to them, and stir to combine. Remove the fruit from the freezer and allow to thaw on the counter.
After the rolled oats have absorbed the apple juice, stir in the pistachios. Into some containers (we use three Ziploc containers), layer one layer of rolled oats, some fruit, and some yogurt. Repeat until all the containers are layered and full. Store in the fridge until your ready to eat.
To serve, scoop the mixture into a bowl, top with some syrup or honey, mix, and enjoy.
